Hink's Scalloped Potatoes for 4 Revised 11/04

1 1/2 tablespoon butter
1 1/2 tablespoon flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 1/2 cup half & half
1 1/3 teaspoon brown sugar
2 baking potatoes; finely sliced
1/2 or more onion; minced

Peel potatoes and slice thinly. In a 2 qt. saucepan over medium heat, melt butter; stir in flour, salt and pepper. Cook for two minutes, stirring constantly. Gradually stir in the Half & Half and brown sugar and cook until the sauce is smooth & thickened. In a 2 qt. casserole, arrange half of the potatoes; sprinkle with half of the onion; pour half of the sauce on top. Repeat with remaining potatoes, onion and sauce. Cover casserole and bake at 350 for 3/4 hour. Uncover and bake 3/4 hour longer or until potatoes are fork tender and top is lightly browned.
