Smashed Parmesan Potatoes #809 9/06

2 lb small red potatoes; halved
1/2 cup freshly grated parmesan; or a little more
1/2 cup olive oil or Butter
salt and pepper
Cook the potatoes in a pot of water and cook until tender; about 15 minutes. Drain, reserving 3/4 cup of the cooking liquid. Return potatoes to the pot and coarsely mash them, adding enough of the cooking liquid to moisten. Stir in the parmesan and oil. Season with salt and pepper. We tried this wth butter rather than olive oil and it was great. 9/06 Tried it with the oil. Stick to the butter.
