Creamed Peas ****1/2 10/97

15 oz can peas & onions; drained
3 tablespoon butter
3 tablespoon flour
3/4 cup cream
3/4 cup chicken broth
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon tarragon
Melt the butter in a saucepan, blend in flour; gradually blend in the broth and cream, stirring constantly. Cook and stir until mixture thickens and bubbles. Add salt, pepper, tarragon, and the peas. Heat through.
Yield: 3 servings
