Fried Chicken & Dumplings **** 5/96

2 lb chicken pieces (approx)
1 cup all purpose flour
1 cup yellow cornmeal
1/2 teaspoon baking powder
1/2 teaspoon salt
2 large eggs

In a deep fat frier or deep, large skillet, heat about 1 inch oil to 400 degrees. In a 1 Gal. ZipLoc bag, combine flour, cornmeal, baking powder, and salt. In a pie plate, lightly beat eggs. Dip chicken, one piece at at a time, in egg, then shake in the flour mixture. Fry chicken til undersides have browned, turn pieces and cook until other sides are brown. Continue cooking until chicken is done, About 15 minutes. Remove chicken and drain on paper towels. Serve immediatly or keep warm in a 150 degree oven. Serve with Slippery Dumplings (#268)
