Chicken Peach (Or Apricot) 9/99

3 chicken breasts; 1/2 size
1 salt and pepper
15 oz can peach pie filling
1/2 tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon nutmeg
1/4 cup pecan halves (plus)
1 hot, cooked rice
Arrange chicken in a baking dish; sprinkle with some salt and pepper. In bowl combine pie filling, lemon juice, the 1/4 ts salt, and nutmeg. Stir in pecans. Pour over chicken pieces. Bake at 375 degrees for 60 minutes or until chicken is tender. Arrange chicken on rice; spoon sauce mixture atop.
