Bran Muffins #896 8/08

1 1/4 cups flour
3 teaspoon Baking Powder
1/2 teaspoon Salt
3/4 cup walnuts; chopped
1/2 cup sugar
1 1/2 cups kellog's All-Bran Cereal
1 1/4 cups milk
1 large egg; beaten
1/3 cup vegetable oil
Preheat oven to 400°F. Stir together the flour, baking powder, salt, walnuts, and sugar. Set aside. Put All-bran and milk into a mixing bowl. Let stand 1 to 2 minutes or until cereal is softened. Add egg and veg. oil. Beat well. Add dry ingredients to cereal mixture, stirring only until combined. Portion batter evenly into 12 greased 2 1/2" muffin pan cups. Bake about 25 minutes or until muffins are golden brown.
