Herbed Potato Wedges

Herbed Potato Wedges

2 tablespoon melted butter
1/4 cup olive oil
1/4 cup grated onion
3 tablespoon parsley
1 teaspoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon basil
1/4 teaspoon salt
1/4 teaspoon pepper
4 large potatoes (about 2 lbs)
1 cup sour cream
1 cup shredded cheddar
salt & Pepper to taste

Brush a large piece of heavy duty aluminum foil with some of the butter. In a small bowl, combine the remaining butter, oil, onion, parsley, chili powder, garlic powder, basil, salt, and pepper. Cut unpeeled potatoes into 1/2 inch wedges. Place potatoes on the foil and brush the oil mixture over the potatoes. Tightly seal the edges of foil. Place on grill about 3 - 4 inches from heat, or in a 350 degree oven and cook for about 35 to 40 minutes until potatoes are tender. Mix the sour cream and cheese together; add salt and pepper to taste and serve with the potatoes.

Yield: 6 servings
