Chile-Cheese Hominy **** 7/96

1/4 cup onion; chopped
2 tablespoon butter
15 1/2 oz can golden hominy
4 oz can green chiles; chopped
1/2 cup sour cream
1/8 teaspoon pepper
1 cup shredded cheddar; divided

Saute onion in the butter for 5 minutes. Add hominy and the next 3 ingredients, and 1/3 cup cheese. Stir well. Pour into a small casserole and bake at 350 for 20 minutes. Sprinkle remaining cheese on top; bake an additional 5 minutes to melt the cheese.

Yield: 3 servings
