Fried Grits #722 1/05

6 cups water
2 cups grits
1/2 teaspoon Salt

Slowly stir grits and salt into briskly boiling water. Reduce heat to medium-low; cover. Cook for 5 to 7 minutes or until thickened, stirring occasionally. Remove from heat. Pour into a small loaf dish which has been Pammed and refrigerate for 3 or 4 hours. Remove from dish and slice into 1/2 inch pieces. Dredge in corn meal, spray with Pam and salt them. Place on a rack under the broiler until browned. Turn, spray with Pam and brown the other side. Serve with some greens. You can put some maple syrup on these.
