Boxty ****1/2 3/95

1 cup mashed potatoes
1 egg
1 1/2 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1 applesauce

Mix everything together except the applesauce. Make into patties or drop scones, fry in butter until lightly, evenly browned. Serve with applesauce or sour cream or syrup.
