Pork Chops With Cider Gravy **** 8/96

1/2 lb bacon; fried crisp, crumbled
4 boneless pork loin chops
1/2 cup chopped onion
6 oz extra wide egg noodles
2 cup frozen cut green beans
2 cup apple juice or cider
2 teaspoon honey mustard
1/2 teaspoon thyme
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoon cornstarch
2 tablespoon water

Cook bacon. Reserve drippings. Partially cook green beans in water. Drain and add about a 1/4 cup of the bacon drippings. Stir. Put 2 Tb. drippings in a large skillet. Add pork chops and sprinkle onion around edges of skillet. Cook medium high for 3 to 5 minutes until pork chops are golden brown, turning once. Cook noodles; drain and add the beans; stir. Meanwhile, in a bowl, combine cider, mustard, salt, thyme, and pepper; mix well. Pour over chops. Reduce heat to a simmer and cook for about fifteen minutes until pork is done. Put a pork chop on each plate over a bed of the noodle and bean mixture. In a small bowl, combine the cornstarch and water; blend until smooth. Add to juices in skillet. Cook and stir over medium heat until bubbly and thickened. Pour over pork chops and noodles. Sprinkle with crumbled bacon.

Yield: 4 servings
