Honey Roasted Cipollini Onions #887 6/08

15 cipollini Onions
OR
1 lb bag frozen white pearl onions; thawed
1/4 cup olive oil
1/3 cup balsamic vinegar
1/3 cup honey
1/2 teaspoon thyme
salt and pepper to taste

In a bowl, whisk together the oil, vinegar, honey, thyme, and salt and pepper. Add the onions and toss to coat. In a cast iron skillet, heat an additional 2 TB olive oil. Once hot, add the onions. Next place the pan in a 325°F oven and bake for 1 hour or until the onions are soft and slightly carmelized.
