Tangy Fruit Pork Chops **** 3/94

4 boneless pork loin chops; not butterfly
1/2 cup cherry preserves
1 tablespoon dijon mustard
1 tablespoon red wine vinegar
Brown the chops in 1 ts. vegetable oil. Mix remaining ingredients together and add to pork chops in skillet. Cover and simmer gently for about 45 min. to an hour or until chops are tender. Serve with cornbread and your faborite vegetable.
