Brown Rice #878 3/08

1 tablespoon olive oil
1 tablespoon Butter
1/4 large onion; chopped
1 cup quick cooking brown rice
2 cups chicken stock
Salt; to taste

In a medium pot over medium heat place oil and butter until melted. Add in the chopped onion; cook for 2 minutes. Add the rice and cook 3 minutes more or until rice is nice and brown. Be sure not to let it burn. Add stock, bring to a boil, cover pot. Lower heat and simmer for 25 minutes, stirring occasionally until rice is tender. Add salt to taste
