BBQ Pork Sandwiches -Crock Pot #692 7/04

1 3 lb pork shoulder roast
2 large green peppers; cut into strips
1 medium onion; sliced into rings
2 tablespoon quick cooking tapioca
1 cup barbeque sauce
coleslaw
Put peppers and onions in crock pot. Sprinkle tapioca over vegetables. Trim fat from roast. If necessary, cut roast to fit in cooker. Pour BBQ sauce over pork. Cover and cook on low heat setting for 11 to 12 hours or on high heat setting for 5 1/2 to 6 hours or longer. Remove roast from cooker. Thinly slice or shred the meat. Strain the veggies and keep warm to serve with the pork. Return meat to a pot and put fresh BBQ sauce over and reheat. . Make sandwiches with pork and veggies or pork, veggies and cole slaw. We used Bone Sucking Sauce for the initial bake and the Ultimate BBQ Sauce for the sandwiches. Revised 3/30/08
