Chipotle Cashew Chicken #877 3/08

1 lb chicken breast; cut in one inch cubes
montreal steak seasoning
2 tablespoon soy sauce
4 cloves garlic; chopped
1 red bell pepper; thin sliced
3/4 large onion; sliced
1 8 oz can Water chestnuts; sliced
1 cup frozen green peas
1/2 tablespoon chipotle in adobo sauce; fine chopped
1 tablespoon cumin
2 tablespoon honey
1/3 cup maple syrup
1 cup raw cashews

Heat a large skillet over high heat. Add 2 tablespoons veg oil. Season the chicken with a lot of the steak seasoning on all sides. Brown chicken on all sides, season with the soy sauce then move off to one side of the pan. Add onions, garlic, and red bell pepper. Cook 2 to 3 minutes then add the water chestnuts and peas. Mix meat and veggies together and cook. Add chipotles, cumin and cashews. Toss to coat. Glaze the mixture with honey and maple syrup. Serve with brown rice, #878.
