Hawaiin Banana Nut Bread #857 9/07

3 cups flour
3/4 teaspoon Salt
1 teaspoon baking soda
2 cups sugar
1 teaspoon Cinnamon
1 cup walnuts; chopped
3 large eggs; beaten
1 cup vegetable oil
2 cups ripe banana or figs
1 8 oz can crushed pineapple; drained
2 teaspoon vanilla
1 cup coconut
1 cup maraschino cherries; diced

Preheat oven to 350°F. Spray Pam in 2 9 X 5 inch loaf pans. In a large mixing bowl, combine the flour, salt, baking soda, sugar, and cinnamon. Add the walnuts, eggs, oil, banana, pineapple, vanilla, coconut, and cherries. Stir until just blended. Pour batter into the two pans. Bake for 1 1/4 hours or until a toothpick inserted into the middle comes out clean. Cool in the pan for 10 minutes, then remove to a wire rack to cool completely.
