Cranberry-Nut Bread **** 11/96

1 cup whole cranberries; chopped
1 cup walnuts; chopped
1 tablespoon unbleached flour
2 cup unbleached flour
1 cup sugar
1/2 teaspoon salt
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
2 eggs; lightly beaten
2 tablespoon vegetable oil
1 grated rind of 1 orange,
1 orange part only
1 juice of 1 orange
1 boiling water

Combine the creanberries and nuts with the one TB of flour and set aside. In a large bowl combine the 2 cups of flour, sugar, salt, baking powder, and soda. In a one cup measure combine the eggs, oil, orange rind, and juice. Add enough boiling water to measure one cup and add this mixture to the dry ingredients and combine well. Fold in the cranberries and nuts. Spoon the batter into a greased pan and bake at 350 until a tester comes out clean. About one hour. Cool in the pan for 10 minutes and then remove to a rack to cool completely.

Yield: 1 loaf
