Bourbon Sweet Potatoes ****1/2 9/97

32 oz can sweet potatoes; drained
2 tablespoon condensed milk
1 egg
1 tablespoon bourbon
1/4 cup butter; softened
1/2 cup brown sugar
6 oz crushed pineapple, undrained
1 cup grapenuts cereal
1/4 cup butter; melted
1/4 cup chopped pecans or almonds
In a mixer, combine potatoes, milk, egg, bourbon, butter, brown sugar, and pineapple. Spread into a casserole. Combine cereal, melted butter, and nuts to form crumb topping. Sprinkle on potato mixture. Bake at 375 for 15 to 20 minutes. This can be made in advance and stored in the fridge. Extend baking time to 30 minutes.
