Honey Pecan Pork Medallions #863 10/07

1 lb pork loin; pounded & tenderized
1/2 cup flour; for dredging
salt & pepper to taste
2 tablespoon Butter
1/4 cup honey
1/2 cup pecans; chopped
In a shallow dish, mix together flour, salt, and pepper. Dredge pork medallions in the flour mixture. In a large skillet, melt butter over medium high heat. Add meat and brown both sides. Transfer to a plate. Mix honey and pecans into the pan dripings. Heat through; be careful not to overcook. Pour sauce over medallions. We served this with Pecan French Toast ( #834) and it was excellent.
