Green Bean Casserole **** 1/1/92

20 oz frozen french green beans
3 tablespoon butter
1/2 cup chopped onion
1 1/2 cup sliced mushrooms
1 each clove garlic; minced
2 tablespoon flour; all purpose
1/2 cup milk
1 teaspoon dijon mustard
1 teaspoon worcestershire sauce
1/4 teaspoon salt
1 dash cayenne pepper
1/2 cup sour cream
1 cup shredded cheddar; divided
1 cup croutons; garlic & cheese

Grease an 8" square or 1 1/2 quart baking dish; set aside. Preheat oven to 375. Cook beans according to package directions, omitting salt. Drain well. Meanwhile in a 10" skillet, melt 2 Tbs. butter over medium heat. Add onion. Cook, stirring often, about 4 minutes. Add remaining 1 Tbs. butter and melt. Add mushrooms and garlic. Cook, stirring often 5 minutes or until soft. Stir in flour and cook, stirring, 1 minute. Gradually stir in milk and cook until thickened. Stir in seasonings until blended. Stir in sour cream, then remove from heat. Stir in beans. To assemble, layer 1/2 of green bean mixture into baking dish. Sprinkle with half of the cheese. Repeat layers. Sprinkle with croutons. Bake 20 minutes or until heated through and cheese is melted.

Yield: 6 servings
