Pork With Apple-Sour Cream Sauce #677 1/04

1 lb pork tenderloin
1 teaspoon oil
1 medium apple; cored and thinly sliced
3/4 cup apple juice
1 small onion; chopped
1/4 teaspoon Salt
1/4 teaspoon sage
1 8 oz carton sour cream
2 tablespoon flour
1 9 oz package refrigerated spinach fettuccine; cooked
cracked black pepper
parmesan cheese

Cut meat into 3/4" slices. Put oil in a large skillet. Heat over medium high heat. Add meat, brown and reduce heat to medium. Cook for 6 to 8 minutes or until juices run clear, turning once. Remove meat from skillet. For sauce. add apple slices, apple juice, onion, salt and sage to skillet. Bring just to boiling and reduce heat. Cover and simmer for 4 to 5 minutes or just until apple slices are tender. In a small bowl stir together sour cream and flour; stir into onion mixture. Cook and stir until thickened and bubbly. Cook and stir for 1 minute more. Add meat and reheat. Serve over hot cooked fettuccine. Sprinkle with pepper and parmesan.

Yield: 4 servings
