Bourbon Beans #854 9/07

5 bacon strips; chopped
1 small onion; sliced into rings
1 5 1/4 oz can pineapple tidbits; drained
1 16 oz can bush's baked beans
1/4 cup brown sugar; packed
1/4 cup bourbon or whiskey
1 teaspoon dry mustard
1 1/2 teaspoon instant coffee granules
In a large skillet, cook bacon until crisp, remove with slotted spoon and set aside. Cook onion in the bacon drippings over medium high heat until golden brown; drain. Add reserved bacon and remaining ingredients to skillet. Bring to a boil, reduce heat and simmer for 15 to 20 minutes or until liquid is reduced, stirring frequently.
