Cheesy Baked Tortellini #852 9/07

2 cup marinara sauce
1/3 cup mascarpone cheese
1 teaspoon thyme
9 oz cheese tortellini
2 oz fresh mozzarella; smoked, sliced -----OR-----
fontina; sliced
1/4 cup parmesan; freshly grated

Preheat the oven to 350°F. Spray Pam in a 6 1/2" square Corningware dish ( 1 1/2 Qt.) Whisk the sauce, mascarpone, and thyme in a bowl to blend. Cook tortellini in a large pot of boiling, salted, water for 3 minutes. Drain. Add tortellini to the sauce and toss to coat. Transfer tortellini mixture to prepared baking dish. Top the mixture with mozzarella and parmesan. Cover and bake for 35 to 40 minutes until the sauce bubbles and the cheeses on top melt. 9/12/07 made this with 2 cups marinara sauce and it was much better. Also used fontina instead of smoked mozzarella and it was much better.
