Pineapple Brunch Casserole 9/98

8 oz can crushed pineapple
1 cup biscuit mix
1 cup milk
4 eggs; slightly beaten
6 tablespoon butter; melted
1 teaspoon dijon mustard
1/2 teaspoon onion powder
1 pinch nutmeg
1 cup shredded cheddar or jack
1 cheese
3 green onions; finely chopped
Preheat oven to 350. Drain pineapple. Reserve 2 tablespoons for garnish. Combine biscuit mix, milk, eggs, butter, mustard, onion powder and nutmeg in a large bowl until smooth. Stir in ham, cheese, onions, and pineapple. Pour into a greased 9" pie plate. Bake for 35 - 40 minutes or until set. Garnish with remaing pineapple.
Yield: 6 servings
