Moons Over My Hammy **** 2/98

1 1/2 tablespoon butter; separated
2 eggs; beaten
1 salt
2 oz deli sliced ham
2 slices sourdough bread
2 slices swiss cheese
1 slice cheddar cheese

Put two medium sized skillets over medium heat. In one skillet, add salt, 1/2 of the butter and cook the eggs. Do not stir because you want these to hold together on the sandwich. Put remaining butter in the other skillet and brown the stack of sliced ham without separating the slices. When the stack of ham slices has browned a bit on both sides, remove it from the pan. Butter one side of each slice of sourdough bread and put one slice in the pan, buttered side down to grill. Immediately put the slices of swiss cheese onto the face-up unbuttered side of the bread that is grilling. Stack the heated ham slices on the swiss cheese. Put the scrambled eggs from the other pan on top of the ham. Place the cheddar cheese slice on the eggs. Top off the sandwich with the remaining slice of sourdough bread. Make sure the unbuttered side faces the cheese. By this time the bread touching the pan should be grilled to a golden brown. Carefully flip the sandwich over and grill the other side until brown. Slice the sandwich diagonally through the middle and serve with hash browns or French fries on the side.
