Southwestern Quesadillas #573 6/01

3 9 inch flour tortillas
1/4 teaspoon chili powder; divided
1/8 teaspoon cumin; divided
6 oz Monterey Jack Cheese; shredded
1 4.5 oz can chopped green chilies; drained
1 2 1/4 oz can sliced ripe olives; drained
3 green onion; finely sliced

Generously spray one side of one tortilla with I Can't Believe Its Not Butter spray. Sprinkle with 1/2 of the chili powder and cumin. On a baking sheet, arrange tortilla spice side down, then top with 1/2 of the cheese, chilies, olives and green onions. Repeat layers ending with tortilla. Spray top tortilla generously with butter spray, then sprinkle with remaining chili powder and cumin. Grill or broil until tortillas are golden and cheese is melted. Cut into wedges and serve with salsa and sour cream. Hominy is a good dish to serve with this.
