Braised Hoisin Beer Short Ribs #841 6/07

2 lbs beef short ribs
salt and pepper
3 tablespoon vegetable oil
10 large garlic cloves; smashed
1 inch piece of ginger; 1/4 inch slices
12 oz beer
3 tablespoon red wine vinegar
1 cup hoisin sauce
Season the ribs generously with the salt and pepper. Heat the oil in a dutch oven over high heat. Brown the ribs on all sides. Remove the ribs and pour off all but a couple tablespoons of the rendered fat. Return the pot to the stove, lower heat to medium and saute garlic and ginger for about 3 minutes. Add beer and the vinegar. Stir. . Add ribs back to the pot, reduce heat and simmer for 2 1/2 hours. Pour the Hoisin sauce over the mixture, stir and simmer for another 1/2 hour. Strain to remove the ginger. We served this with potatoes, bacon, and beans and it was very good, but there was a lot of sauce, so tonight we will serve it over rice.
