Cottage Potatoes #715 1/05

3 large idaho potatoes
1/4 cup Butter
1 cup cottage cheese
1/2 large onion; diced
salt and pepper
paprika
shredded cheddar
2 hard boiled eggs

Scrub the potatoes, slice 1/2 inch and put in pot with water to cover. Boil until tender, about 15 minutes, then drain and mash them very coursely with 2 tablespoons of the butter. This wants to be very lumpy. Add cottage cheese, onion, and salt and pepper to taste. Stir the mixture gently and then put in a greased casserole. Dot with the remaining 2 TB butter and sprinkle with the paprika. Bake, uncovered at 350°F for 30 minutes. We used about 6 or 7 red potatoes with good results. 4/06 We added some shredded cheddar to it (about 3/4 cup) . 1/07 added 2 hard boiled eggs to the top.
