Barbeque Meatloaf #839 6/07

1 1/2 lb ground beef
1 cup fresh breadcrumbs
1 large onion; minced
1 large egg; slightly beaten
1 1/2 teaspoon Salt
1/2 teaspoon pepper
2 8 oz cans tomato sauce
3 tablespoon vinegar
3 tablespoon brown sugar
2 tablespoon dijon mustard
2 tablespoon Worcestershire sauce
Water to thin if needed
Preheat oven to 350°F. Mix together the beef, bread crumbs, onion, egg, salt, pepper, and 1/2 cup of the tomato sauce. Form this mixture into a loaf and place it in a shallow pan lined with foil. Stir together the remaining tomato sauce, vinegar, sugar, mustard, and worcestershire. Pour some of this sauce over the meatloaf. Bake for 1 hour, sopping the grease up and basting with the sauce every 15 minutes. Let this rest for a while to firm it up, or even have it the next day.
