Pizza Meat Loaf **** 8/97

2 lb ground beef
2 eggs; lightly beaten
8 oz can pizza sauce; divided
1 cup saltine crumbs
1/2 cup parmesan cheese
1 cup mozzarella cheese; divided
1/2 cup onion; chopped
1/4 cup green pepper; chopped
1 teaspoon seasoned salt
1 teaspoon oregano
1/4 teaspoon pepper
1 additional pizza sauce

In a bowl, combine beef, eggs, 3/4 cup pizza sauce, crumbs, Parmesan cheese, 1/4 cup Mozzarella cheese, onion, green pepper, salt, oregano, and pepper; mix well. Pat into a greased 8" square baking dish. Bake at 350 for 50 minutes. Drain; spread remaining pizza sauce over loaf; bake 10 minutes more. Sprinkle with remaining Mozzarella cheese; return to oven for 3 to 4 minutes or until cheese is melted. Serve with additional pizza sauce.

Yield: 8 servings
