Apricot Glazed Meatloaf 1/2000 - Rev. 3/01

3/4 lb ground beef
3/4 lb ground pork
1 onion; finely chopped
3/4 cup fresh bread crumbs
2 eggs
1/4 cup ketchup
2 teaspoon parsley
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup apricot preserves
2 teaspoon poupon mustard
1/4 cup ketchup
1 tablespoon onion; minced
Preheat oven to 350. In a large bowl combine beef, pork, bread crumbs, eggs, the 1/4 cup ketchup, onion, parsley and pepper. Mix until blended. Shape into loaf. Put some foil on a cookie tin, spray with Pam, and place meatloaf on it. Bake 45 minutes. Meanwhile, in a small bowl, stir together the remaining 1/4 cup ketchup, apricot preserves, onions, and mustard. Pour glaze over meatloaf. Bake 30 minutes longer.
