Rice-3 Cheese Caserole **** 1/97

1/2 cup mont.jack cheese; shredded
1/2 cup cheddar; shredded
1/2 cup miracle whip
1/4 cup green onions; sliced
8 oz can sliced water chestnuts; use about 3/4
2 oz jar diced pimientos; drained, use 1/2
2 cup cooked rice
1/4 cup parmesan cheese
Drain water chestnuts and pimientos. Mix jack cheese, cheddar cheese, Miracle Whip, onions, water chestnuts and pimientos together. Layer 1/2 of the rice and half of the cheese mixture in a caserole. Repeat. Sprinkle with the Parmesan cheese. Cook in a 325 degree oven for about 35 minutes or until hot. You can add some extra water chestnuts if you like a little more crunch. 5/06 Next time try 1/2 for 4 servings. This was changed 7/07. 2 Success rice bags give 3 cups of rice, so there will be some left for snacking.
