Baked Mashed Potatoes with Cheese & Crumbs #824 2/07

2 lbs potatoes; peeled & diced
1/2 cup milk
1/2 stick Butter; melted
3/4 cup mozzarella cheese; grated
1 cup parmesan; grated
Salt & Pepper
3 tablespoon bread crumbs
2 tablespoon Butter; melted
Preheat oven to 400°F. Spray Pam into a 1 3/4 Qt square Corningware dish. Cook the potatoes in a pot of boilng salted water until tender, about 20 minutes. Drain; return the potatoes to the same pot and mash well. Mix in the milk and melted butter. Add more butter if needed now. Mix in the mozzarella and 1/2 cup of the Parmesan. Season to taste with the salt and pepper. Stir the bread crumbs and remaining Parmesan and melted butter together in a small bowl; sprinkle over the mashed potatoes. Bake uncovered until the topping is golden brown, about 20 to 30 minutes.
