Corn Pone

1/2 cup corn meal
3 tablespoon flour
1 teaspoon baking powder
1 heaping teaspoon sugar
1/4 teaspoon salt
1/2 cup buttermilk; maybe a little more
2 tablespoon bacon fat, melted; separated
Mix dry ingredients together. Add 1 TB bacon fat. Gradually add buttermilk until you achieve a nice spoonable batter. Heat pan with remaining bacon fat over high heat. Spoon batter into pan into 4 patties. Reduce heat and cook until golden brown on both sides.
