Cranberry Sauce **** 11/96

3 cup cranberries (12 oz.)
1 cup water
1 cup sugar
1 tablespoon grated fresh orange peel
1 tablespoon orange juice concentrate
Remove stems from cranberries. Boil the water, then add the sugar. Stirring until it dissolves. Add the orange juice, orange peel and cranberries. Cover and simmer for 5 - 8 minutes. Cranberries should pop and be soft to the touch. Cool uncovered in the fridge overnight.
Yield: 3 cups
