Camembert En Croute **** 4/97

4 oz piece puff pastry
1 egg; beaten
1 ground black pepper
6 fresh sage leaves
4 oz wheel camembert cheese
1 fresh fruit
1 toasted almonds
1 melted butter

Lightly dust a countertop and rolling pin with all purpose flour. Roll the pastry into a 6 inch square. Brush pastry with beaten egg, season with freshly ground pepper. Place the six sage leaves in the center. Top with the camembert wheel and fold the pastry over top of the cheese. Turn over and tuck in excess dough, shaping until round. Score top lightly with a fork and brush with beaten egg. Bake at 375 for 30 to 40 minutes until browned. Cool 15 minutes. Sprinkle toasted almonds over top and drizzle with the melted butter. Serve with a crusty french bread and butter. Have fresh sliced apples, bananas, oranges, and some grapes to put on the plate. You can use an 8 oz wheel for this; just increase the size of the pastry.
