Ham 'n' Egg Muffins #786 3/06

1 english mufin; split
1/4 cup swiss cheese; shredded
1/4 cup sour cream
2 tablespoon mayonaise
3/4 teaspoon lemon juice
3 oz canadian Bacon; 3 slices
3 large eggs; hard cooked, sliced
paprika
salt and pepper

Place English muffin halves on a baking sheet. Sprinkle with cheese. Bake at 350°F for 4 minutes or until cheese is melted. Meanwhie in a small bowl, combine sour cream, mayo, and lemon juice. Pan fry the bacon and place the bacon and eggs on each muffin half; season with salt and pepper; top with sour cream mixture, Sprinkle with paprika. Bake for 15 minutes or until heated through. I doubled the sauce on this and used about 3/4 of it.
