Baked Lima Beans and Bacon #575 6/01

1 lb dried small lima beans
1 tablespoon sugar
1 tablespoon dry Mustard
1 teaspoon salt
1/8 teaspoon paprika
2 tablespoon molasses
1/4 lb bacon; cut in 1inch pieces
green onions; green tops only

Soak the limas overnight in water to cover. In the morning, pour off the liquid. Cover the beans with fresh water and boil for 1/2 hour. Drain, reserving the water. Add molasses to the beans. Preheat the oven to 325 degrees. Combine the sugar, mustard, salt and paprika. In a bean pot or 9" square baking dish, make a layer of beans, then sprinkle some of the seasoning. Make additional layers of beans and seasonings until the are all used up. Cover the beans with the bacon pieces. Pour the water in which the beans were boiled gently over the contents of the dish just to come even with the bacon slices. Bake the beans until they are very tender, 1 to 1 1/2 hours. You could add some ham to this for a complete meal. Sprinkle with the green onion tops before serving.
