Brie Potatoes 8/98

2 lb potatoes; peeled & diced
1 clove garlic; minced
1/2 cup green onions; thinly sliced
2 tablespoon butter
4 oz cream cheese; softened
1/2 cup half & half
3/4 teaspoon salt
1/4 teaspoon pepper
8 oz brie; rind removed
1 parsley; for garnish

Cook potatoes in boiling,salted water for 15 minutes or until tender. Drain well. Meanwhile saute garlic and green onion in butter for about 2 minutes or until softened. Mash potatoes. Beat in garlic mixture, cream cheese, half & half, salt and pepper. Peel the brie and cut into 1/2 inch cubes. Fold into the potatoes. Place into a 1 1/2 guart casserole. Bake at 450 for 15 minutes or until top begins to lightly brown. Garnish with parsley. Serve at once. You could substitute about 8 oz. blue cheese for the brie if desired.

Yield: 4 servings
