Brunch Casserole **** 3/94

1 lb bulk sausage
4 eggs
1 3/4 cup milk
1 teaspoon salt
1 teaspoon dry mustard
5 slices white bread
3/4 lb sharp cheddar; cubed
1/2 green pepper; chopped
1/2 onion; chopped

Trim and cube the bread slices. Brown sausage and drain on paper towels. Beat eggs well; add milk, salt, mustard, and beat again. Combine this mixture with remaining ingredients in a large bowl. Transfer to a covered casserole and bake at 350 for one hour. This can be made up the night before and refrigerated but do not bake until it has reached room temperature.

Yield: 4 servings
