Cornbread for Two #799 5/06

5 tablespoon milk
1 tablespoon oil
1/2 cup self rising cornmeal mix
1/2 tablespoon Sugar
1/2 egg; beaten
Heat a 5" cast iron skillet with about a teaspoon of oil on the stovetop. Preheat oven to 425°F. Mix all ingredients together. Don't overmix. Pour mixture into the skillet and put into the oven for about 15 minutes, then switch to broil to get it nice and brown on top.
