Ranch Potato Casserole **** 3/98

1 1/4 lb small red potatoes
1/2 cup sour cream
1/2 cup ranch dressing
1/4 cup bacon bits, or real bacon
1 tablespoon parsley
4 oz shredded cheddar; (1 cup)

2 oz shredded cheddar; (1/2 cup)
2 cup corn flakes; slightly crushed
1/4 cup butter; melted
Scrub and quarter the potatoes; leaving the skins on. Cook and set aside. Combine sour cream, dressing, bacon, parsley, and 1 cup of cheese. Place potatoes in a casserole. Pour about 3/4 of the sour cream mixture over potatoes and gently toss. This depends on how juicy you like it. Top with 1/2 cup of cheese. Combine corn flakes and butter; sprinkle over casserole. Bake at 350 for 40 minutes.
