Red-Eye Gravy **** 8/95

2 tablespoon unsalted butter
1 lb smoked ham; cut into 1/3
1 dice
2 tablespoon flour
1 cup chicken stock
1/2 cup coca-cola
1/3 cup brewed strong coffee
1 salt & pepper
Melt butter in a medium saucepan. Add the ham and saute over moderately high heat until nicely browned, 3 to 4 minutes. Reduce heat to low and stir in the flour until incorporated. Add the chicken stock, Coca-Cola, and coffee and simmer, stirring frequently, until the gravy is smooth and thickened, 8 to 10 minutes. Season with salt and pepper. Serve this with greens and grits.
