Sweet & Sour Sauce

8 oz can pineapple chunks
8 oz can tomato sauce
1/2 cup brown sugar
1/2 cup balsamic vinegar
1/2 cup onion; chopped
1/2 cup green pepper; chopped
1 tablespoon cornstarch
1 tablespoon cold water

Drain pineapple, reserving 1/3 cup juice. Halve pineapple chunks. In a medium saucepan, combine tomato sauce, reserved pineapple juice, brown sugar, vineagar, onion and green pepper. Stir over medium high heat until mixture boils. Reduce heat. Simmer uncovered 5 minutes. In a small bowl, mix cornstarch and cold water. Stir cornstarch mixture and pineapple into tomatoe sauce mixture. Stir over medium high heat until mixture thickens and bubbles. Add to cooked chicken or pork; serve over rice or couscous.

Yield: 6 servings
