Broccoli-Ham Puff Pancake #790 4/06

1/4 cup Butter
1 cup flour
4 large eggs
1 cup milk

3 tablespoon Butter
3 tablespoon flour
1 cup plus 2 TB milk
1 10 oz pck frozen chopped broccoli; thawed
1 1/2 cups fully cooked ham; cubed
1/3 cup sour cream
1 1/2 teaspoon lemon juice
1/8 teaspoon hot sauce or more to taste
shredded cheddar
powdered sugar; optional
Place butter in a 10 inch quiche dish, place in a 425°F oven 3-4 minutes or until melted. In a mixing bowl, beat flour, eggs, and milk until smooth.Pour into prepared dish and bake for 22-25 minutes or until puffed and golden brown. Meanwhile, in a saucepan, melt butter. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for ten minutes or until thickened. Reduce heat; add remaining ingredients except for cheese and powdered sugar. Cook for ten minutes or until heated through. If mixture gets too thick, just add more milk. Sprinkle the pancake with powdered sugar if desired. Cut pancake into serving wedges and spoon mixture over top. Sprinkle with shredded cheddar and serve.
