Applesauce Cornmeal Muffins **** 11/96

1 cup yellow cornmeal
1/2 cup white flour
3 tablespoon brown sugar
2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk
1 egg
3 tablespoon oil
1 cup applesauce

In a bowl stir together cornmeal, flour, brown sugar, baking powder and salt. In another bowl, beat together milk, egg, and oil until well blended. Stir in applesauce and add to dry ingredients. Stir until moistened. Bake at 425 for 20 to 25 minutes until nicely browned.

Yield: 12 muffins
