Praline Sweet Potatoes 766 10/05

2 cups canned sweet potatoes; mashed
1/4 cup milk
2 large egg yolks
1/2 teaspoon Salt
dash pepper
1/2 cup brown sugar
1/4 cup Butter
1/4 cup corn syrup
1/4 cup pecans; chopped
In a mixing bowl, combine the sweet potatoes, milk, egg yolks, salt and pepper. Transfer to a greased 1 quart baking dish. Bake, uncovered for 22 minutes. Meanwhile, in a small saucepan, combine the butter, brown sugar, and corn syrup. Cook until the sugar is melted. Sprinkle potatoes with pecans and top with the praline mixture.
