Easy Yeast Biscuits #751 7/05

1 1/4 ounce pck dry yeast
3/4 cup water; 98 to 105 degrees
2 1/2 cups bisquick
3/4 cup bisquick; for work surface
1 tablespoon Sugar
1/4 cup melted butter

Preheat oven to 400°F . Dissolve yeast in the water. Put the 2 1/2 cups Bisquick in a large bowl; stir in the sugar. Add the yeast mixture, stirring vigorously. Sprinkle the work surface with the remaining Bisquick. Turn the dough out onto the suface and knead well, 15 to 20 times. Shape the dough into heaping tablespoonsful. Place on a lightly greased baking sheet, cover with a damp cloth and let rise in a warm place for 1 hour. Put dough into muffin tins and brush with melted butter. Bake for 12 minutes or until golden brown. Brush the rolls again with melted butter while they are still hot.
