Louisiana Peach Brandy #750 7/05

1 Wide Mouth gallon jar, with top
12 peaches; washed, unpeeled
2 1/2 lbs Sugar
1 fifth gin
Pour sugar and gin into jar. Stir to dissolve sugar. Slice peaches in half and remove the pit. Add peaches to jar. Leave in a secure place. Every couple of days, twist jar around to help dissolve the sugar. After a week you shouldn't have to do this any more. Start this in July and it will be done by November or December. Remove peaches (they are good on ice cream). Strain liquid through several layers of cheese cloth so it will be beautifully clear. Bottle it up.
